Maple Sugar Scones

Maple syrup is the flavour of March. Here is a simple scone recipe that showcases that maple goodness with maple sugar and maple syrup.

4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons maple sugar (more if you like a sweet scone)
A pinch of salt
1 cup of cold, salted butter
1 cup cream (or your favourite dairy alternative - we often use oat milk)
2 eggs
2-3 tablespoons maple syrup
Maple sugar for dusting

Preheat oven to 350°. In a large bowl mix flour, baking powder, maple sugar, and salt. Cut in butter with two knives until pea-size and the mixture is crumbly.

In a small bowl, combine cream, one egg and one-two tablespoons of maple syrup. Add this to your flour mixture, mixing with your hands until you have a sticky dough. Place a sheet of parchment paper on a baking sheet. Roll dough to 1-inch thick and cut into 12-16 squares.

Combine remaining maple syrup with the remaining egg and brush squares. Sprinkle with remaining maple sugar. Bake for 15-20 minutes until golden brown.

Enjoy on their own or with friend, with clotted cream, whipped cream, jam or some more maple syrup or a dusting of some of that maple sugar! And a cup of tea, of course.
